Preparation time: 5 minutes

Ingredients:
1 Chicken leg quarter
1 Tbsp Butter
1 Tbsp minced Shallots
1.5 cups Chicken Stock
2 Tbsp Heavy Cream
1 cup fresh Spinach

Procedure:
1) Melt butter in a pan then sprinkle shallots.
2) Add chicken on top of the shallots. Season with salt and pepper.
3) Add enough stock to barely cover the chicken. Bring to a simmer.
4) Cover and poach over low heat for 20-25 minutes.
5) Take chicken out of the pan and set aside.
6) Reduce pan juices to approximately a quarter of a cup.
7) Add spinach and heavy cream. Simmer over low heat until sauce is slightly thick.
8) Return chicken into the pan.
9) Serve hot.

Vegan Bacon Seasoning

As you can imagine by the name of my blog, I really love bacon. Well for no other reason other than curiosity I purchased this bacon seasoning by Deliciou on the recommendation of one of my Facebook followers. Ok, maybe not so much a recommendation as a, “hey, look at this, doesn’t it sound nasty?” I thought to myself, “ehh, I’ll give it a try.” Low and behold to my surprise, this is one of my go to seasonings right now and I have other bacon flavored seasoning in the cupboard.

So, I recently got braces as a 40 something year old and have found myself eating a lot of cottage cheese, mashed potatoes, and Mac n cheese. I have put Deliciou bacon seasoning on all of it and it’s absolutely fantastic! I have no doubt that it goes well on burgers and chicken as well, but I’m not quite there on my journey with the braces.

Miracle Noodle & Miracle Rice Review

So, like anything plant based, I’m a little skeptical and Miracle Noodle was no different. I’ve tried three different varieties that this company has to offer and 2 out of 3 so far I’d recommend. They do have a vast selection of products, so I have not even scratched the surface of what they have to offer. You can check a few of the different varieties here.

I started off with the ziti, which, unfortunately I did not take any pictures of, however, this is the one I wouldn’t recommend. Have you ever eaten styrofoam or a pool noodle? Me neither, but this is what I imagine the texture and taste would be (maybe I did something wrong?). I bought a combo pack so I got a pretty good deal on all 5 packs I got so I wasn’t bothered by one product out of five that I didn’t like. It did however sway me from trying some of of other varieties for a few weeks. I did give a pack to my neighbors who were doing a low carb diet and they enjoyed their fettuccine noodles.

So, fast forward a few weeks and now I decide it’s time to try some of these other varieties. I had some leftover rotisserie chicken and decided to use the spinach spaghetti. The package says to rinse for one minute under cool water and I highly recommend doing this as the smell from this package and the ziti threw me off. It smelled a little fishy so not only was my skepticism high for it being plant based, now we add in a fishy smell…anyway, once rinsed it was fine. The package also recommends cutting the noodle in half with some kitchen sheers which I recommend also. The package says to put in an unoiled pan on medium heat to cook the moisture out. I did this for 4-5 minutes and miraculously the noodles don’t stick.

Now that my noodles are cooked semi dry I added some garlic, chicken, one egg and cooked a few more minutes and then dished it up with some Fly by Jing Sichuan Chili Crisp Sauce which is delicious on just about everything including ice cream. I was a little disappointed that the noodles didn’t really have any flavor but just took on whatever you put on them. Kind of reminded me of tofu (taste wise). Other than that the noodles were pretty consistent with other plant based noodles I’ve tried.

All in all, I’d give this one a pass as it certainly helps on the carb and calorie count…

Next up…Miracle Rice

So this stuff definitely surprised me since the first two weren’t great but doable especially if you have Gluten issues or are doing a Keto or paleo diet. All the directions are the same except cutting the rice with kitchen sheers 😁. When I was rinsing it, the rice’s texture reminded me of tapioca pearls that you would find in a Vietnamese boba bubble tea and looked like pearl rice.

With the rice I decided to use the rest of my rotisserie chicken and make a simple stir fry. After it was done cooking I used some vegan cheese powder and an everything seasoning I got from Flavor god. This didn’t need any sauce and was very tasty. The rice reminded me of actual rice, not 100% but close enough.

Conclusion

So, of all the varieties that I tried, the rice was by far the best. Even though I wasn’t crazy about the others, if you are sticking to a low/no carb, paleo, vegan or gluten free diet I would say that you should give these guys a try. I know we all have different tastes and preferences but I definitely recommend the rice.

4th Annual Taco Tour

So this years taco tour did not go off as planned, you know, Covid and all. In years past we have had upwards of 15 people at the starting line. So, just a brief overview of what the taco tour is…I invite a bunch of people to a taco joint, they show up, we eat one taco, and move on to the next taco joint. Pretty simple…we usually make it to four or five spots before we’re all ready to go into a food coma. Some people are done after one or two spots but tag along just for the fun, fellowship, and shenanigans!

The Genesis of The Taco Tour

While this is the 4th annual taco tour, it has been around for five years, but due to Covid, we had to cancel last years tour.

Anyway, five years ago it was Cinco De Mayo and I just so happened to have the day off so I decided to go eat tacos all day long and take pictures along the way. The next year I decided to turn it into an event and invite all my taco lovin friends and that’s all she wrote!
